Other characterizing element of Anteprima OPERA is the presence of great Wines and typical flavours beside the dealt Operas.
 
Five Wines for Five Operas where those elements of character, structure bring to light themselves and personalities who can be part of the ones and the others, valuing them and rendering them only in theirs to meet itself to Verona, city of Opera, Love and Wine.
DOP Extravirgin Olive Oil, DOP cheeses, IGP rices, cold cuts and meats, typical vegetables, honey and jam them in the accompanying Cocktail Buffet.

The Wine
Lugana is the first D.O.C. which has been registered in Lombardia and one of the first ones in Italy.
Perla” is a white wine made from carefully selected Trebbiano di Lugana and Chardonnay grapes grown in the vineyards of San Carlo, San Rocco and Casalin. The soils are of Moraine origin containing limy clay, and the vines grown using the Guyot method with vineyards having a density equal to or more than 5000 plants per hectare. The wine making process takes place in steel containers. The wine is dry and full-bodied, and it is 13.5% proof.
This wine goes perfectly with hors d’oeuvres, vegetable first courses, medium-seasoned cheeses, both raw and cooked fish including shellfish. The firm also produces other white wines such as our “Madre Perla” winner of the Top Hundred 2007 prize – the 100 best Italian wines.
 
The Firm
Perla del Garda belongs to the new generation of wine cellars wedding long-established traditions in the vineyard with up-to-date technology in the wine cellar.
The philosophy behind our production comes down to one fundamental principal: the making of wine begins in the vineyard, responding to each year’s climatic conditions with the care and the wisdom inherent in our farming culture, and without any fixed schedules. The two sustaining pillars of our method are that the bunches of grapes should be harvested by hand between August and November, and that the wine making proceeds by gravity.
Founded in 2000 our vineyards cover roughly 25 hectares of the hills around Lonato del Garda along the road connecting the village to the sanctuary dedicated to the Madonna della Scoperta.

The Wine
It may be considered as representing the epitome of Italian white wine. Soave is a basic wine, made without sacrificing either fragrance or lightness, but characterized by a vibrant liveliness, which makes it an ideal, unpretentious and trustworthy regular companion for the consumer.
From the organoleptic point of view its color is delicate, the bouquet is precise and its taste develops quickly and in a gratifying manner that never exhausts the palate, no matter how long you have been drinking it.
Alongside our Soave DOC we also produce our Soave Classico DOC – a more ambitious white wine made from grapes grown on the range of hills around Soave and Monteforte, and our Soave Spumante (Sparkling) suited to modern and seductive tastes. Our Recioto di Soave DOC is a great wine for meditation.
 
The Wine route
The Soave Wine Route represents an ideal reference point in getting to know the area around Soave. It is a lively, active and hard working expression of  the ethos of wine-tourism in Italy .
The itinerary route is 50 kilometres of road that winds through the vineyards, ancient parishes and castles of this stretch of territory from which the homonymous Soave wine takes its name, and accompanying the wine tourist to each of the 13 local towns embracing the Soave cru. Its more than 100 members answer to the precise quality requirements demanded of all associates, and amongst them are 50 wine producing firms, 13 territorial bodies and associations, 10 farm restaurants,  27 restaurants, 8 hotels or similar structures, 7 olive oil presses, 1 ham producer, 1 producer of cakes and sweets, 1 dairy and a distillery.

The Wine
Le piacevoli sensazioni che vi avvolgono percorrendo le dolci colline che circondano la tenuta, si ripropongono nei prodotti di questa terra ai quali viene dedicata con passione ogni giorno gran parte del lavoro e delle attenzioni.
Il vino è frutto del classico uvaggio veronese, che ha subito un leggero appassimento in fruttaio, Nel bicchiere si presenta di un rosso rubino tendente al porpora. Al naso rivela una densità e una struttura medie; buona è la dotazione alcolica, calda e avvolgente, sotto cui traspaiono note di fiori, erbe macerate e frutta matura che rimanda alla ciliegia.
Il palato è denso e mediamente fitto, come la struttura che rivela una buona forza tannica, con note mentolate, balsamiche, di cuoio e di china, sorrette da una discreta forza acida. Ancora ritornano i richiami alle erbe di campo e alla frutta rossa e matura, ciliegia e prugna in primis.
Gli abbinamenti possono andare dalle zuppe invernali, a base di funghi, carne o altro, ai piatti a base di carne, arrosti e grigliate rosse soprattutto, sino ai formaggi di media stagionatura.
La temperatura ideale di servizio è tra i 16 e 17 °C.
 
The Firm
The Azienda Agricola Massimago is situated in the hearth of the hills that surround Verona. This region is very famous all over the world for their very weel known wines as Recioto and Amarone della Valpolicella.
Surrounded by a untouched wood on the best prospect of the Mezzane’s valley, Massimago is distinguishable by its high cypresses, its 1200 olive oil trees and its vineyards ordinated in long lines that goes up to 330 metres. Since 1883 the Cracco Rossi Chauvenet family wards Massimago (from latin Maximi Ager, “Maximus’s field”), a place famous since the Roman Era and cited by Ulpian for its founts, smooth declivities and the fertility of its soil.
Today Massimago is also an ideal place for people seeking a pleasant and relaxed place. The ambient is elegant and sophisticated. The philosophy of the owners has been to recreate a place that could comunicate wellness and harmony in every space. The property is surrounded by vignards and secular olive oil trees, equipped by a pool, an ancient and spectacular wine cellar digged in the rocks and a hold style biliard room. All the apartments are also totally equipped with AC, TV, internet, washing machine and furnished with characteristic furniture.
 
 

 VALPOLICELLA and other wines

The Wine
Scriani produces Valpolicella Classico, Valpolicella Classico Superiore Ripasso, Amarone della Valpolicella, Recioto della Valpolicella and Carpanè wines.
Amarone is the leading Scriani product, aged eighteen months in barrique, eight months in large oak-wood casks and then refined a further six months in the bottle.
The grape varieties are Corvina, Rondinella and Molinara harvested by hand (after the twentieth of September: selection of best bunches exposed to the sun).
The organoleptic characteristics are: intense ruby red, tending towards pyrope; truly clean bouquet of berry fruit, jam and whole-cherry liqueur; surprises of vanilla, spices, licorice and bitter almond.
Degree proof: 16% vol.
 
The Firm
Stefano and Paolo Cottini have associated the long family tradition in the art of wine-making with the Scriani trademark. The firm is in Fumane and has vineyards covering approximately 8 hectares, mostly cultivated using the traditional veronese trellis method. Some of the more recently planted vineyards, such is "Ronchiel", use the Guyot system, an advantage where grape quality is concerned.
The wine-cellar sector of the "Scriani" vineyards is also very carefully tended to: experts control all the intricate winemaking phases on 24-hour basis, according to family tradition wich indeed demands finesse and very close attention.

The Wine
The Enantio wine is the most important red grape in the Terra dei Forti area. And above all, it is a naturalized plant – the only one that was actually born from this soil, with roots that go back several thousand years.
Mention was already made in the 1st century a.d by Pliny, the Roman historian who described it as: “La brusca: hoc est vitis silvestris, quod vocatur oenanthium”. Enantio is a unique wine, of an extremely intense ruby red colour, whilst its bouquet has a penetrating aroma of ripe fruit. The wine has a great body, and its tannins, which are strong and muscular are softened by their  amelioration in wooden casks. Traditionally matched with game dishes, with grilled and braised meats, with the typical “pastissada di caval” and with well seasoned cheeses such as the Monte Veronese D.O.P.
 
The Firm
The Wine Cellar was begun in 1957 and quickly became a reference point from local wine growers. As it has grown from strength to strength it has always maintained the same principles that founded its constitution, and namely: to work fro the common good whilst fully respecting the land and the men who live off it. The Wine Cellar promotes the cultivation of vines capable of best expressing their own individuality, and of best adapting to the local terrain. This especially refers to Pinot Grigio, but also to the native vine Enantio from which an excellent wine with a strong and vigorous personality is produced.
The Viticoltori in Avio offer their customers two distinct types of produce: the “Refined” wines which go on sale only after a precise maturation period in wooden casks, and the “Avio” range which includes all the single-grape wines whose roots are well grounded in this territory.

"NANO VIALONE VERONESE I.G.P." RICE

The Rice
The Veronese’s Nano Vialone is the only rice in Europe with the P.G.I. mark (Protected Geographical Indication). This acknowledgement comes from the quality of the territory and from the pureness of the spring waters used in the rice paddies. The professional working process of the producers has made this kind of rice the jewel in the crown in the agriculture of the veronese plain.
 
The Consortium, the Farms, the Fair
The Consortium for the Safeguarding has its head office in Isola della Scala, from where the methods of production and working rice - nowadays carried out with technologically advanced machinery –are guaranteed. A grandiose Rice Fair dedicated to Vialone Nano has been organized in this pleasant little town for the past 40 years when, for two weeks everything is geared to the distribution of the famous “Risotto all’Isolana”. Alongside the Fair are innumerable displays and performances: parades tied to local traditions and folklore, exhibitions, conferences, culture and sport.
